According to Persona Central, the Catherine: Full Body demo is available now in the Japanese Switch eShop! Since the Switch is region free, downloading the demo from the Japanese Switch eShop is pretty simple. Making a Nintendo account with Japan as the primary region and linking it to a new user on the Switch gives players access to the Japanese eShop.
